This is a classic cake, perfected.
There is nothing more delightful than a banana and walnut loaf cake – the moistness of the cake, the natural sweetness of the ripe bananas, the crunchy toasted walnuts and cinnamon and salt in the right measure. And the fact that it gets only better and sticky the next day and onward.
It is my personal favourite, and I have had many a breakfast where the last few sips of coffee are drunk with bites of this cake. Such a satisfying and happy moment. My parents have too.
This cake has been developed with a combination of flours, which imparts it a sturdiness in its bake. It is a large loaf which bakes very well and reliably every time, giving you a firm cracked top and well defined walls, which come away from the baking tin. The signs of a perfectly baked cake.
And since it relies so heavily on ripe bananas – this cake is a must for everybody who is a fan of a genuine banana and walnut loaf cake. Also, the mix has been built using much lesser sugar than consensus since the bananas are the anchor.
The chopped walnuts have been added into the mix generously – they make up 11% of the dry mix which is an enormous figure, and when baked – most bites of the cake will have some part or the other walnut.
This baking mix contains a banana walnut cake mix, to make a large loaf of 12 grand serves. It can be perfect for a large family or gathering, or simply halved and frozen for another day. We recommend that once the loaf is cool, please cling wrap it and refrigerate to eat the a few hours or maybe the next day.
