In continuation of our love for fruit and vegetables in cakes comes this bright, happy lemon yoghurt cake mix. It is an ode to clean, plump, brightly yellow and juicy lemons which we have access to in India round the year!
Another version of this cake was one of our top selling items, in the early days of the business. But that formulation was feasible in a production kitchen, not a home kitchen. So, after many, many trials, wherein tweaks were made in the smallest measure and step by step, this recipe was finalised. And the result is delightful.
We have done our calculations precisely, and if you follow the instructions diligently – you will create a large, moist, lightly sweet and elegant lemon loaf cake, with the wonderful and fresh flavour of lemon juice and zest. Add to that the fact that all the wet ingredients you need for this cake are always available in our households.
And then there is the lemon glaze! It creates the brightest accent to an already delicious cake, and we have given you enough of it to cover the loaf generously. Please do allow the loaf cake to cool completely before applying the glaze, and then be patient and allow it to set by refrigerating.
This baking mix contains a lemon yoghurt cake mix and a lemon glaze mix, to make a large loaf of 12 grand serves. Please use a 7.5/8 inch loaf tin, this will give you a tall loaf, which is our style of doing things. You could use a 9 inch long tin, but then the cake will be shorter.
