01 vanilla shortbread

These are delicious vanilla butter cookies, made the way they should be: with five ingredients only.

Cut into rectangles of 2 inch x 1.25 inch, each cookie assumes its own rectangle, and a shade of golden brown on baking. They melt in your mouth, are rich and crumbly and oh so elegant.

They are a delight to make and eat because the most basic ingredients – flour, butter and sugar – become so special when used in the right proportions. The dough coming together is one of the finest sensorial experiences. But it also keep us on our toes and demands attentiveness, because of how delicate it is. After making and resting the dough, we cut it into almost perfect rectangles. They are then frozen since this is an all butter cookie. A slight sprinkle of sugar after arranging them on our baking trays and then baking creates a beautiful cookie.
