05 fibre cookie

We persevered greatly to develop this cookie, and the end result is the perfect digestive biscuit.

The fibre cookie is simple in taste, and made with milk and coarse oat flour which we grind at the factory. Just the right amount of brown sugar to see you through a tea break, this is a dry butter biscuit which crumbles in your mouth. And without palm oil featuring in the ingredient list!

The butter and sugar are creamed together, till light and fluffy. The combination of flours is mixed in, along with milk. Salt is a critical tool, as it always is with cookie making as it balances the flavour of the cookie.

A box of fibre cookies contains seven pouches, and each pouch contains two fibre cookies neatly packed. While this biscuit may not make into the fancy cookie category, it is one which will always be reliable, in the time of need with a cup of tea. Of that, we are sure.
