07 t’s chocolate cookie
T’s chocolate cookie is inspired by a bar of dark chocolate, and is in dedication to our culinary teachers who know not that they have taught us our craft.
This business started with absolutely no understanding of the art of confectionery and how to build and operate a production kitchen. It is by watching and reading that we learnt the alphabet of confectionery, and over time, running a business in India taught us the rest.
When it comes to this pure chocolate cookie – the unsweetened, high fat cocoa powder gives us control over the amount of sugar, and the butter gives the cookie a tenderness and crumbliness. And then there is salt. The ultimate tool in the arsenal of the pastry maker, which enhances the chocolate flavour.
Oh, and never to forget – it took only six ingredients to out this together. And a few hundred trials!
Two chocolate cookies are packed neatly into a beautiful laminated pouch, which preserves impeccably both flavour and aroma, and a box of T’s chocolate cookies contains six pouches.
