A cake is magic, to create and to eat.
But there is enough cake out there in the market, and cake mixes. So why ours?
Because we want you to make a cake the way we make everything. And that was where our challenge lay.
Every baking mix of m&j will make a beautiful cake which is subtle, elegant and beyond delicious. Because that is our style. They are generous in size, anchored in a fresh fruit or vegetable to give them natural sweetness and moisture, and easy to assemble since we ask you to use ingredients always available in our Indian households.
There are no synthetic additives and there are no added flavours. So, when you make a banana walnut loaf cake – you will have to mash over ripe bananas to add to the batter. And when you make a lemon yoghurt loaf cake – you will zest and juice the lemons, which will fill your kitchen with a wonderful aroma. Yes, this will take time and effort – a few minutes perhaps.
In the fickle world of quick food, food fads and “free from” – we are purists and very serious confectioners. We would rather not create a single confection, than sell confectionery which did not match our own standards first. Which is why we have not added any flavours to our cake mixes, and manipulated or distorted any ingredient. After all – is there any substitute for a freshly grated carrot, or natural lemon juice, pray tell?
While these mixes have been designed to make magnificent baked goods quickly and conveniently, they have taken an incredibly long time to craft. And hundreds of recipes later, we have nailed it. It is not a joke when we say that merely glancing at a recipe now tells us if the cake will stand, or fall? Will the crumb be sturdy and close? Will the cake be delicious and moist, even though our products have no additives. And so on.
And this is what we have come up with in our test kitchen led by a single person and supported by well wishers who gave their time. And the occasional words of encouragement.
